Lazy Deviled Eggs

I love deviled eggs, but they are very time consuming.  First you have to cut them all in half, scoop out the yolks, mix up the filling, carefully scoop the filling into each egg half (making sure you portion it out so you don't end up with the lone egg half that didn't have filling).  That is just too difficult for me to do on a regular basis.
 
One of my favorite low carb snacks is my Lazy Deviled Eggs.
 

This recipe couldn't be easier: Peel 2 eggs and put them in a small bowl, add 1 Tbps Mayo and 1 Tsp Mustard.  Chop up the eggs with a fork and mix.  Easy, right?!  You could even go the extra step and sprinkle a little paprika on top.

The nutrition breakdown for 2 medium eggs: 212 Calories, 18.5g Fat, 0.9g Carbs, 0.2 Fiber, 10.7g Protein

The macro breakdown is: Fat 61.5% -  Carbs 3% - Protein 35.5%

This also makes a great lunch by adding 5 oz of Tuna and a sprinkle of Dill.
