Hard Boiled Eggs - The EASY Way

If you haven't cooked hard boiled eggs in your oven yet, go try it NOW!  Go preheat your oven right now, It will change your life!  Well, it changed mine.  Who wants to wait for a pot of water to boil and only get a few eggs at a time?  Not me.  I have been cooking eggs in my oven for a while now and it never fails.
 

Hard-boiled eggs are a staple in my fridge.  I have an old egg carton just for them.  I cook a large batch at least once a week.

There are 2 ways I have cooked my eggs....laying them on the top rack with a cookie sheet underneath and the way in the picture above, a mini muffin tin.  I prefer the muffin tin way because it is so much easier to pull the eggs out of a hot oven when they are in a pan.  If you lay the eggs on the oven rack, you will need a pan underneath because there is always one egg that cracks and could make a big mess on the bottom of your oven.

Preheat your oven to 325 degrees and cook your eggs for 30 minutes, then plunge in ice water for a few minutes.  It couldn't be easier.  If hard boiled eggs are a staple in your low carb diet and you are still boiling, try the oven next time.

I also have a trick to peel the hard boiled eggs.  I have heard people say: "Only use old eggs for hard boiled" or "Add baking soda to your water"  But really, all you need is a spoon....


 
 
Crack the egg like normal, then slip a spoon between the egg and the shell.  The shell will come off in large chunks without taking the egg white with it.  Super easy and everyone has a spoon, so try this next time you are peeling eggs.  It will save you so much time.
